Help a mom out
In the hours we were without eletricity the last two days we had two bags of chicken breast thaw. So we need to eat chicken every day for the next week. Here’s where you come in. I need some recipes. My kids will likely get tired of chicken/veggie soup and chicken and rice after about two days. Do you have some kid-friendly chicken recipes you can send my way? My kids and I absolutely love LOVE fresh chicken fingers. We cut up chicken breasts (OK, I do that part), dip them in milk, and then shake them in a bag of crushed up goldfish crackers (or any crackers, really). Bake them at 375 for about 20 minutes. Yum-o. Dip them in whatever you want…

We usually make this with leftover chicken, but it will work otherwise as well. We braise or bake our chicken breast, shred it & reheat it in gravy and eat it over mashed potatoes. It is very tasty & my daughter loves anything in gravy over mashed potatoes.
You could also make chicken tacos, chicken parmesan, chicken sandwiches and chicken pot pie.
Actually my kids love it just baked in the oven with nothing added. From frozen, I usually do this at 350 for 45 minutes (or about 20 minutes on each side). I haven’t really done it from thawed but it can be done.
Or, brown them a little on the stove and then bake them covered in jar or canned gravy (350 for like an hour - hour and a half) and then you can serve the gravy over mashed potatoes.
Grilling them is also an option then you can coat them with bbq sauce or something.

Sounds weird but google for coca-cola chicken. Quite surprised but it turned out quite well when our kids were younger.
I like to use chicken in a spaghetti pie. You can use ground beef too but since you are in need of something with chicken here goes!
Boil 1 pound or fistful of spaghetti.
Brown 1 lb chicken and cut into pieces.
Add chicken to jar of spag sauce.
Place boiled spag in pie plate and add 1 egg, 1/4 parm cheese and 2-3 tablespoons butter. Stir and form into a ‘pie crust’ in the pan.
Add chicken/sauce mixture and top with 2 cups of your favorite cheese, I use mozzarella. Cook at 350 for 20-25 minutes or until the cheese is slightly browned and bubbly. Cut like pie and enjoy!

We do a lot of chicken and noodles. boil the chicken until it pulls apart. cook with some cream of mushroom soup (or cream of chicken or cream of celery) I add about 3/4 of a cup of milk. Then add to egg noodles.
I also have a good chicken enchilada receipe but that would mean I have to look for it

My kids love chicken quesadillas. Simply cut up your chicken into strips. Season it however you like, we use Goya Adobo, Goya Sazon, and little bit of Cumin. Cook it in a skillet in a bit of butter on top of the stove.
Place meat in soft tortilla shells and pour some melted velveeta cheese over the chicken. Wrap it up and pop it off in the microwave for about 25 to 30 seconds.
